There are days when you just want something warm, simple, and comforting—and this cobbler absolutely delivered. I made this half-asleep, swapped a few things to make it work for me, and somehow it turned out so good.
If you’re looking for something sweet but not overwhelming (and honestly just easy), this is one of those recipes you’ll keep coming back to.
Ingredients
For the filling:
- 4 cups fresh or frozen blueberries
- ½ cup sugar (I swapped for honey)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
For the cobbler topping:
- 1 cup all-purpose flour
- ½ cup sugar (again, used honey here)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup milk
- 5 tablespoons melted butter
Instructions
- Preheat your oven to 350°F.
- In a bowl, mix blueberries, sugar (or honey), lemon juice, and cornstarch. Pour into a greased baking dish.
- In another bowl, whisk together flour, sugar (or honey), baking powder, and salt.
- Stir in milk and melted butter until combined.
- Spoon the batter over the blueberry mixture (don’t worry about making it perfect).
- Bake for 35–40 minutes, or until the top is golden and the filling is bubbly.
- Let it cool slightly… or don’t (I didn’t ๐ ).
Notes
- The honey swap gives it a softer, slightly richer flavor.
- This is very forgiving—perfect for low-energy days.
- Tastes amazing warm (especially if you tolerate dairy, a little vanilla ice cream would be unreal here).
